French Toast Tortillaswith Berries
2 large eggs
1/3 cup milk
2 tablespoons sugar
1 1/2 teaspoons rum (optional)
1/4 teaspoon cinnamon
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
4 burritos slices tortillas, cut into quarters
4 teaspoons butter, melted
Confectioners' sugar
2 cups sliced strawberries
2 cups blueberries
Maple syrup
Beat eggs, milk, sugar, rum, cinnamon, vanilla extract and almond extract in a large shallow bowl. Soak tortilla quarters, in egg mixture for 10 minutes until softened. Add 1 teaspoon melted butter to a large nonstick skillet and heat over medium-high heat. Add four tortilla quarters and cook until golden, 2 to 3 minutes, turning once. Transfer to large serving plate; cover and keep warm. Repeat process three more times with remaining tortilla quarters and melted butter. Sprinkle tortillas with confectioners' sugar and serve with berries and maple syrup.
